Coffee ice cream cake!

A simple, delicious and appealing cake with ice cream made from scratch!




This coffee ice cream cake is one of the simplest cakes you can make. It not only tastes great but looks amazing too. This cake can easily be prepped in 20 mins and has to be frozen for at least 5 hours.


I'm preparing this cake in an 8 inch cake mold. It is important to use a spring form cake mold so your cake can easily be demoulded.

Ingredients:

150 gm oreos (finely crushed with cream)

60 gm melted butter, I'm using salted

11/2 cups of whipping cream + 1/4 cup cream + 1/4 cup cream

50 gm condensed milk

2 tsp coffee powder

50 gm dark chocolate


Method:

  • Heat 1/4 cup cream in the microwave and pour it over 50 gm of dark chocolate. Let it sit for 30 seconds and then mix well to get a smooth ganache.

  • Mix 2 tsp of instant coffee powder to 1/4 cup cream and microwave until the coffee is dissolved completely.

  • Let the ganache and cream cool down.

  • Crush your oreos finely in a food processor. To the crushed oreos add in the melted butter and mix well until the mixture holds it shape. add an additional tsp of butter if you think its required.

  • Line your mold with parchment paper on the sides and bottom. Add the oreo and butter crust mixture into the mold and refrigerate for a while.

  • To prepare the ice cream, whip 11/2 cups of cream until you get medium to medium stiff peaks. To this add in the cooled coffee and cream mixture and 2 tbsp of the ganache and the condensed milk and beat again. The cream will deflate a bit because of the condensed milk and coffee cream mixture.

  • Once everything is combined add in a few dollops of the ganache and swirl it in the ice cream mix.

  • Pour this into the mold and keep adding more ganache in between. Finally add some more ganache ontop and swirl with a toothpick or skewer.

  • Freeze for 5 hours or overnight. Once the cake is ready, demould it and let it sit outside for 5-7 mins. Don't worry the cake will not melt.

  • After 5 mins cut a slice and enjoy 😀.
