Dalgona tiramisu pastry

Soft sponge cake and dalgona tiramisu mousse layered together makes a perfect dessert with the right balance of sweetness and foolproof tiramisu flavour!




Ingredients:

For the cake:

2 egg whites

1/4 tsp cream of tarter OR 1/4 tsp white vinegar OR 1/2 tsp lemon juice

25 g castor sugar


2 egg yolks

30 g castor sugar

1 tbsp melted butter

3 tbsp milk (add more if needed)

48 g cake flour** (recipe for cake flour at the bottom of the recipe)

1 tbsp cocoa powder (I used Dutch processed, you can use 2 tbsp of the normal unsweetened cocao powder too)



For the mousse:

65g of cream cheese

2 tbsp sugar

1/3 cup whipping cream

2 1/2 tbsp sugar

1 tbsp coffee powder

1 tbsp sugar

1 tbsp water


Method:

Sponge cake:

Whip the egg whites to stiff peaks, add the vinegar or cream of tarter or lemon juice before whipping and add the sugar gradually.


In a separate bowl beat the egg yolks, sugar and butter till it becomes slightly lighter in color, then add in the milk, give it another mix. To this sift the cake flour and cocoa powder, give this all a good mix until its not too thick and not to thin.


To this mixture first whisk in 2 dollops of the egg whites to lighten the entire mixture then fold in the rest of the egg whites until well combined.


You need a thin layer for this cake. I have used an 11x8 inch cake mold to get a thin layer of cake. If you want you can make a proper cake and cut thin even layers.


Preheat your oven at 150 degree Celsius and bake the cake at 140 degree Celsius for around 20 mins or until a skewer comes out clean.


For the mousse:

Use your hand or stand mixer, beat the cream cheese with sugar until its creamy, to this fold in the whipped cream.


Make the dalgona coffee by beating equal parts water, coffee and sugar until it forms whipped cream consistency.


Fold the dalgona coffee in the cream cheese and whipped cream mixture and the mousse is ready!


Assemble:

Put some of the mousse on a layer of cake, cover it with another layer and then add another layer of mousse, dust some cocoa powder on it and garnish with a spring of mint.


Plate this beautiful dessert and then dig in! Enjoy :)
