A super simple and healthy falafel recipe, even when you have only a few hours on hand!



What are the health benefits of this recipe?

The main ingredient is chickpeas which is rich in Vitamins, proteins and fiber. Chickpeas help with weight loss and prevent several diseases. This recipe also contains parsley which is rich in vitamin A a nutrient that improves eyesight, it is also a rich source of vitamin K which helps keep bones strong. This recipe is a perfect way to include chickpeas and parsley in your diet.


The falafel mix can be refrigerated for upto 5 days, prepare the mix and make an evening snack whenever you like!


Falafel is also a vegan dish, which makes all the more better :)


Ingredients:

1 cup chickpeas

1/3 bunch of parsley

1 small onion

3-4 garlic cloves

1/2 bunch coriander leaves

1 tsp cumin powder

1 tsp paprika powder

Salt as per taste

Some pepper powder

11/2 tsp baking soda

1/4 cup breadcrumbs



Method:


  • In a kadai add around 2 cups water, add the chickpeas. Heat on low to meduim heat for around 15-20 minutes. Take off the heat and let it sit with the water for 1 hour minimum.

  • Or soak the chickpeas in water overnight or atleast 5 hours.


  • Once done, add the chickpeas, onion roughly chopped, garlic roughly chopped, parsley, coriander, spices and baking soda into a food processor. 


  • Once blended it should look coarse but still be able to hold its shape.


  • Transfer into a bowl and add the breadcrumbs to the falafel mix. Cover and refrigerate for 30 mins to 1 hour.


  • Heat the oil for shallow frying. These can be baked and air fried aswell, roll out your falafels and shallow fry. Serve hot.
